is it possible if i use a hidden field with dynamic data check, for example Login / E-Mail adress that the questions ask in the form an be add to the wordpress user after submitting the form?

only to clarify cause i’m not sure cause of your example

can i only update existing user metadata or can i also add new fields

like example: do you like ice? yes / no / sometimes

as a radio button field

that will be add to the wordpress user then?
