Altering Star Ratings

I know I can set and remove default values in the form, but if no value is default, all five stars are still selected, even though the default value isn’t assigned.to the field. (see image, no default value was assigned and I selected no value, but tried to submit the form)

I want to set no default value and have no stars selected when the form loads.
