Extended characters cause empty fields

When an extended character (like ë) is used in a field, that field is completely empty in the mail.
The site is: http://contact.meandermagazine.net.
What can be wrong?

Saving process.php in UTF-8 doesn’t seem to help.

I guess I have to update some things on my site to make it work with UTF-8.
